With its heavenly flavor, September's featured cheese will bring a glow to your eyes. Full Moon is one of our farmstead-style bloomy rind goat cheeses that ripen from dense to creamy, and develops complexity of flavor as it ages. Like the moon, it's beautiful at any phase!

New:   a soft bloomy rind

            with a smooth, dense paste

 

Half:    a velvet rind holding

            luscious cream with

            a silken paste

 

Full:     savory cream cradled

            within a velvety rind
